Pork roast and sauerkraut

Pork roast and sauerkraut
So, I have a pork roast defrosting, have sauerkraut in the fridge, and potates. My mother use to fix a pork roast with sauerkraut and mash potatoes but cannot remember how she prepared the dish. Does anyone know what to do?

1. My mother used to do hers in a pressure cooker
I never really paid too much attention to how she did it though. I believe she would rub the roast with mustard and cook it in the pressure cooker, and then when it was almost done, she would add the sauerkraut.
This is something I've never had occasion to make professionally, but I make a different version at home.

Layer one 1lb. bag of sauerkraut (drained) in the bottom of a 9x13 glass baking dish.
Sprinkle with about a cup of brown sugar.
Top with enough sliced apples to cover the top. Squeeze about a Tbl. fresh lemon juice over the apples.
Slice one good sized pork loin into 1/2 inch medallions and lay them on top of the apples.
Sprinkle pork with S&P.
Cover pork with another 1lb bag of sauerkraut (drained)
Layer more sliced apples.
Sprinkle with another cup of brown sugar.
Finish with a grating of fresh nutmeg and more S&P over the top.

Cover with foil and bake at 350 degrees for about 45 minutes. Remove foil and continue baking until top is golden brown.

I never really cared for Sauerkraut and Pork growing up, but I had this version at a friends house years ago and have made it this way ever since.
The pork gets unbelievably tender and the brown sugar mellows the sauerkraut without making it sweet.
Delicious!

5. Next time I am going to do it that way
that sounds wonderful! Guess the brown sugar would turn the saurkraut and apple into a sweet and sour

2. We did it at the deer camp one time.
We smoked a Boston Butt pork roast on the pit for about 2 hours. We cut off a nice chunk from the end and opened a can of sauerkraut. We wrapped the cut off chunk and the sauerkraut in tin foil and let it go for another hour. Really super juicy pork roast. It kicked ass.

3. Pork and Sauerkraut
Always serve with a large bowl of mashed potatoes!
4 to 5 lb. pork roast
2 large cans sauerkraut
1/2 cup applesauce
1/4 cup brown sugar

Preparation -
Place the pork roast in a dutch oven. Add about 1 cup water plus a small amount of salt and pepper. Cover and cook over very low heat for about 2 hours. Add the sauerkraut, applesauce and brown sugar. Cover and simmer about 1 to 1-1/2 hours longer or until the roast is falling apart.

This can also be made in the oven in a covered roasting pan. Roast the pork at 350º for about 2 hours, then add the sauerkraut and lower the temperature to 300º and roast for an additional 1-1/2 hours. It's also a good crock pot meal. Just add everything to the crock pot and cook for about 6 to 8 hours on low.

4. I like to cook pork and sauerkraut in the slow cooker.
It's SOOO tender. Sprinkle the pork roast with salt and pepper. Add the sauerkraut, and sprinkle on a little bit of brown sugar and caraway seeds (if you have them). I also pour on 2 teaspoons of soy sauce (this mellows everything out real nicely.) Cook on low or high, your choice. Delicious and EASY!

6. Another way
You can stew a pork roast in sauerkraut and beer. The meat tends to fall apart, so it ends up more like a stew than a roast. But it's good. You can also throw in a couple of apples.
