Politicat's banana bread recipe
I tried that, and it turned out really great. Thanks for posting the recipe. The only thing, I subbed 1/4 cut wheat germ for 1/4 C of the 1 1/4 C flour, and it took about 20 minutes longer to cook than I expected. Still and all, it turned out real good. Next time I might make it without that sub, or figure out a better way to deal with the flour measurements.

1. Are you at lower altitude than me?
I'm not sure why wheat germ would make it need longer, but altitude can do funky things. I'm at 6000 feet, so it changes a lot of things.

I've used wheat bran in the bread (and oat flour made by whirling my oatmeal in a blender) and the times seem about the same.

2. Not sure abt altitude
I'm in N California maybe an hour from the coast. I guess that'd be different enough. Also, I wasn't totally accurate on some of the measurements. When you used bran or oatmeal flour, was that as part of the 1 1/4 cups, and it took the exact same 50 minutes to bake? Well, anyway I have a new oven, and it has been taking longer to bake stuff. So I guess it could be any # of factors. But I really did like the banana bread, it was exceptionally moist with using 1 1/4 C flour instead of the usual 2 cups that most breads call for. Yummers!
