My new favorite cooking/recipe source
I am a nut for Indian food and I've found a great resource. There are hundreds of veggie friendly recipes and wonderful new flavors to explore. I'm working through reading the cauliflower recipes tonight and planning for tomorrow. Just wanted to share...

2. Are you a vegan-esseof? Cauliflower brings me back
a long time, when Mom was cooking, and I'm 50! I don't reckon I've cooked cauliflower since I ran away from home! :7

3. Time to reintroduce yourself to cabbage with a colledge education
because it's lovely stuff and quite versatile, whether you just steam it and eat it with butter, salt and pepper, or get fancy with white or cheese sauces. Or Indian cuisine.

4. Well, I do have built-in Irish, and do like cabbage.
In keeping with that theme, I love reubens and kraut (that's my other half!).

But cauliflower? The only way I do recall eating it is in a casserole, probably loaded with cheese, and covered with buttered bread crumbs. Kind of loses the nutritious value, no?

And I don't cook Indian food; my DH hates curry, and just about everything else about it. Sigh.

5. I like mine relatively naked, too, and pull out the spicy, complicated
stuff for dinner parties or maybe treating myself on my birthday.

That's why I suggested the butter, salt and pepper.

Another way I like it is to saute a little minced ginger, add the cauliflower and stir for a second or two, add some white wine, white pepper and sugar, and cover to steam in the wine until it's done. Sprinkle with some toasted sesame seeds and serve.

That's simple.

The only time I drown it (or anything else) in a white sauce is if I'm using it as a filling for crepes.

6. Cauliflower makes a great puree
Steam the flowerets until tender, place in food processor with butter and/or little cream, and whir until smooth. The puree has the look of mashed potatoes but with a very different flavor. I first saw this preparation on a PBS cooking show. They paired it with grilled salmon.

You ran away from home because of cauliflower?:D

7. No, it was a bit more complicated than that, Gormy!
:D But like an old penny, I did return after I grew up and the folks mellowed. Ha! And they/we thought times were tough then!

I do like your puree idea; might give me a reason to buy that cauliflower stuff! :hi:

8. I am no longer vegan
Edited on Fri May-26-06 09:54 AM by The empressof all
I actually have eaten vegan or vegeterian for most of my adult life but I am currently eating animal proteins. I actually followed a macrobiotic diet for several years.

I love cauliflower. I'm frying it tonight in fritters ((pakoras))

I use it quite a bit in soup. Puree it up with cream, broth, butter and cheese.....Yum!
