Sausage Pie
Sausage Pie
I just found this recipe and I'm dying to try it, but I'll use Italian sausage, and add Sautéed onions, peppers and mushrooms.

1 large pie crust
1 pound hot sausage
3 eggs
¼ teaspoon salt
1 cup grated cheddar cheese
1 cup grated mozzarella cheese

Preheat oven to 350°.

Brown sausage and drain. Add

slightly beaten eggs and salt. Line crust with cheddar cheese. Add sausage mixture to shell. Top with mozzarella cheese. Bake for 30 minutes.

2. I do a similar one

I add tomatoes, fried onions, and sausage. We call it Pizza Quiche.

(on edit) Don't forget lots of fresh basil!

10. That sounds delicious. My kids liked a sandwich idea of mine...
I'd skillet fry hamburger buns in garlic butter. Then spread tomato paste on them open faced. Sprinkle with basil, then top with Jimmy Dean's or a similar cooked breakfast sausage. Sprinkle liberally with grated cheese and pop into the microwave for a few seconds. Everyone loved these!

3. I'd make only one suggestion ......
If you substitute Italian sausage for the 'hot sausage' (whatever that is), you may want to consider some aged, sharp provolone in place of the cheddar. If you do, by the way, mind the salt. The aged provolone is way saltier than the kind you normally get.

11. Provolone does sound good. Yes, I'd use it before Cheddar.

5. Question
I assume that's an uncooked pie crust.

6. Oh my
I'm not a big fan of hot stuff, or at least my innards aren't, so I'd substitute on the hot sausage too. Italian Quiche. Who knew!

7. One more, Sausage Cheese Grits Casserole
Sausage Cheese Grits Casserole

Ingredients:

1 cup dry regular or quick grits

1 small/medium onion, chopped

optional: chopped bell pepper or serrano chilies
2 cups grated sharp cheddar cheese
4 tablespoons butter or margarine
4 eggs, lightly beaten
3/4 cup milk

Cook grits according to package directions.

Brown sausage with onions and celery (may also add bell peppers or serrano chilies to this). Drain fat on paper towels.

Remove grits from heat and stir in 1 1/2 cup grated cheese (reserve 1/2 cup for top of casserole).

Stir in butter until melted.

Add eggs, milk, and sausage mixture; blend well by hand.

Stir in cayenne pepper and salt, to taste.

Pour mixture into a 3-quart casserole dish coated with cooking spray. Sprinkle with remaining cheese.

8. My mother
developed a version of quiche (cream, eggs, onions... bacon optional) using Montery Jack & chopped green Ortega chili peppers. She called it "California Quiche".

Then I developed one using skinned, crumbled browned Italian sausage, fresh garlic and fresh basil.

Yours only seems different in that it has no cream. I think I'd add sauteed onions.

A basic quiche can be varied in all kindsa fun ways.
