What do I do with Tilapia and Mahi-Mahi?

What do I do with Tilapia and Mahi-Mahi?
Like a crazed woman I bought both frozen packages at Sam's (no Costso here :( ), and I've never cooked either. A co-worker said she had cooked both and even told me how to do it a while back, but I can't get in touch with her now.

I'm looking for ideas. Thanks in advance!

1. Mr. LD and I LOVE Tilapia...
this is how I prepare it-- its so easy, and yummy, and no clean-up!

I preheat the oven to 350degrees. I line a jelly roll pan with foil, including up the sides. Spray it with Pam. Lightly rub the tilapia filets with olive oil, and sprinkle both sides with salt and pepper. Place on the foil-lined pan. Squeeze fresh lemon juice over the filets. Cook for about 5 minutes.

They are absolutely delicious- light and healthy too-

Do I need to defrost them first?

4. yes, defrost them first...
where I get them, they usually come in a plastic bag. I will then put that plastic bag inside of a plastic freezer bag, just to make sure that they don't freezer-burn. When I am going to fix them, I will take them out of the freezer bag, and they are still inside of the original store plastic bag. I will put that bag in a sink of warm water, and let them sit there awhile. They will defrost that way. I suppose you could use defrost in the microwave, but I have been leery of doing that, as the filets that I get are so thin, and I am afraid of actually cooking them in the microwave, so that I couldn't fix them the way I want to in the oven.

this is a super-simple way to fix them, and even Mr. LD loves them fixed this way!! enjoy! :hi:

8. We just did something similar...
but added soy sauce and ginger along with the lemon. Yum!

3. Tilapia are great for fish tacos==
cook the tilapia with a little breading of flour and cornmeal. Heat tortillas. Fill with thinly sliced cabbage and green onions dressed with mayo that you mix with ground cumin and let sit long enough for the flavor to come out. Throw some chopped tomato and fresh cilantro on the tacos. You can also throw some sunflower seeds onto the filling.

5. We make ceviche with talapia
I know it is classically made with scallops, but talapia works just great.

Google ceviche and you'll find many recipes.

I like to make it with a mix of citrus ... not just lemons, but also limes and oranges.

6. This is my favorite tilapia recipe. Absolutely delicious.
Tilapia Lemon Parmesan
2-1/2 lbs. Tilapia fillets
2-4 tsp. butter or margarine, softened
2 tsp. fresh lemon juice
Lemon-Parmesan Sauce

1 cup mayonnaise
2 tbl. fresh lemon juice
1/2 cup grated Parmesan cheese
Garnish

2 lemons, sliced fresh parsley
Rinse the tilapia fillets in cold water and drain thoroughly.
Top with butter or margarine and lemon juice.
Broil about 4 inches from the source of heat for approximately 5 to 6 minutes or until the fish is opaque and flakes easily when tested with a fork.
Top each portion with 1-2 tbl. of Lemon-Parmesan Sauce; broil 2-3 minutes or until sauce puffs and turns golden brown.
Place fillets on serving plate; garnish with lemon slices and fresh parsley.
Serves: 6

7. You wanna be grillin' that mahi!
Mahi is one of my favorite fish!

It makes fabulous mahi tacos a la Baja Fresh: stuff strips of grilled mahi mahi into your corn tortillas, add some shredded cabbage and a slice of avocado, and top with chipotle mayo. Heaven!
