Have we had a leeks thread?
I did a search and couldn't find one. Right now, my garden is full of leeks, which can stay where they are and get fatter until fall, unless we have a lot of rain, in which case they will start to rot. I've been thinning them weekly, using them in scalloped potatoes, squash saute, and other places where I'd use onions. What I need is innovative ways to use leeks. Not soup recipes, because my family won't eat soups in the summer and won't ever eat cold soup under any circumstances.

I'm pickling up a storm this year and wonder if anyone has ever made pickled leeks.

Any creative leeky suggestions?

1. You can use it instead of spinach
to make borek (you know, the filo-feta-egg pie that is common throughout the Middle East and Balkans. Too bad your family won't eat leeks in soup. What about chicken pot pies with leeks as a main vegetable?

Try them in a stir-fry, leek-potato pancakes, even in salads-just giant green onions in a way.

5. They make great fench onion soup; they're wonderful grilled
(I split them in half for the grill and cover with olive oil and salt).

Or use in place of anything that you would use an onion for.

And your family might be willing to try vichysoisse - I'm not a cold soup person at all, but I *will* eat that. Love it! I prefer to eat it hot, though.

I love leeks!

I don't know why they're so much more expensive than onions. It really sucks.

Oh, man... the idea of leeks in a rich chicken-broth risotto with a little saffron and almond makes my mouth water.
