I'm puzzled about this recipe
It calls for a can of whole cranberries. Do you suppose they mean a can of whole berry cranberry sauce? I've never seen cans of whole plain cranberries.

Cranberry Chicken
Submitted by: Stu Einstein ("StuEmc2"), Geneva, NY
Serves: 8 "normal" portions
Ingredients:

* 8 boneless, skinless chicken breast halves
* 1 can whole cranberries
* 1 pkg dry onion soup mix
* 1 bottle Catalina dressing

Preparation:
Mix all ingredients; pour over chicken in a shallow baking dish. Bake uncovered at 325 degrees for 45 - 60 minutes.

3. And plain ones would be way too tart!

2. This is what they're talking about:

It's in the same place as the jellied stuff, but it has far more texture and flavor.

(There's a family recipe that uses the whole berry sauce, a little whipped cream, nuts and julienned carrots (I think) that was the only way I'd eat anything with cranberries until I was about 13 and my palate matured... and I learned how evil UTIs can be.)

5. It sounds pretty good, so far. What's the cooking method?
One of my favorite dishes is a roasted chicken with a blackberry sauce (these days, I used the mixed berries from Costco since I don't have anywhere to pick them.) Berries and chicken go really well together.

7. Cranberry Chicken - it was a standard when I was growing up.
Yes, that's whole berry cranberry sauce that's called for in the recipe.

I used to looove having this for dinner. Of course, this was back in the day before boneless breasts, so my mother used leg quarters and bone-in breasts - skin on!

We had it with brown rice. Mmmmm.

9. Whole raw cranberries would explode like popcorn!
that must have been the sauce that has the chunks in it, not the jelly roll stuff.

10. I fixed it tonight using the "whole" type cran sauce
I made homemade Catalina dressing so it would be salt & sugar free as well as use 1/2 the salad oil. The chicken was great. I always have a hard time getting chicken breasts to be juicy. But tonight I could even serve them with plain brown rice which is a bit dry itself. This chicken recipe is a winner.

12. I think you could
I made a double batch of the sauce mix and put 1/2 in the freezer. Heck, next time I might just put it all in the crockpot frozen!

13. Could you share your dressing recipe?
Because I would really love to make Cranberry Chicken - without buying the bottled dressing. HFCS is verboten in Casa Dora.

Thanks!
