Help.... I need a good Stuffed Green Pepper recipe
I have several peppers that have reached use em or lose status. I found a couple of recipes on-line, but I am hoping for one that is tried and true.

1. my stuffed peppers are different every time I do them
depending on what's in the refer

the basics are

meat
rice
tomato sauce of some kind
onion
garlic
cheese

I have been known to add squash or spinach to the mix

what I do is clean the peppers and blanch them in boiling water. I then cook up what ever is gonna be the stuffing in a big skillet, stuff the peppers and top with cheese then bake for 20-30 minutes

2. or you could chop those peppers and freeze them...
...for that winter moment when you want to make something and don't have any bell pepper on hand to chop. Warning, though. Bell pepper aroma will permeate plastic, so you gotta double wrap them for the freezer.

I used ground beef, arborio rice, onion, and the chopped tops of the pepper. To this I added several cloves of garlic, some oregano, thyme, and a pinch of fennel. I cheated and used a jar of pasta sauce and added a handful of fresh chopped tomatoes.

Thanks for the tip on blanching the peppers! They are in the oven and smell devoon!
