Comfort Foods for the Disheartened Soul
We all know that chocolate can heal a thousand wounds but I'm going for a cheesy creamy soup today. Here's what I'm gonna do....

Cheesey Creamy Vegetable Soup

Combine fresh asparagas, brocolli, and cauliflower with about 4 or 5 cans of chicken broth. Simmer until vegtables are soft and mushy. Using the hand blender--blend until smooth.

In a seperate pot sweat a large onion in a half stick of butter. Add about 1/4 cup flour to form a roux. Add milk (probably about 1-2 cups. You want this to be smooth with a bit of thickness. Add as much cheddar cheese as I can find in my fridge...(I think I have about a pound left) Stir in cheese until smooth and creamy.

Combine the contents of the two pots. Yum.....

2. Porcupine Meatballs
mix up some ground beef, onion, garlic, mushrooms and peppers with the seasoning of your choice (Italian would be good)

gently mix in a bunch of uncooked Minute Rice and form into meatballs

place in baking pan and add two cans condensed tomato or cream of mushroom soup (undiluted)

bake at 350 for an hour or so until done

serve with salad and crusty bread.

easy, hearty, tasty and good for the soul when you are feeling "prickly"

3. I did a TRIPLE recipe of mac and cheese yesterday.
But I gave most of it to a friend who just had a baby.
