I just got a British cookbook from the library
I just got some cookbook that was originally published in Britain... and almost all the desert recipies call for double cream!

Can you even get that in Canada?

2. My answer was a little simpler than theirs
I just took the butterfat reading off the front of the heavy cream container and added melted butter by weight to achieve the required fat content.

I don't think I'd want it in my coffee--it tends to separate--but it works very nicely in baking and cooking.
