I can't recall if I ever posted this before. Its incredibly simple and fast to make.
You'll be tossing the spinach, so a large pan is a help. In fact, a giant wok is ideal.
Pour some olive oil in your pan. Add some chopped garlic. Let's say enough olive oil to thoroughly coat the bottom of a 12" saute pan. Four cloves of garlic, chopped. Allow the garlic to soften. Try to catch it before it starts to go brown.
Add in the spinach and toss it until it is all coated with the oil and garlic. You want the spinach to reduce its volume by about half .... nice and wilted.
Put onto a plate or shallow bowl. Grind some pepper and sprinkle with Parmesan cheese. If the cheese isn't salty, you may want to add some salt, too. Give it a generous squeeze of lemon juice and its done.
Some years ago we had this at a restaurant. Not sure which one - maybe Carrabba's. No matter. We played around with the dish and this is as close to what we had there as can be.
