Post Christmas Cookies--
I was cleaning out the pantry yesterday and realized I still had a bit of Christmas baking stuff...So I made the three ingredient wonderous macaroons.

1 can of sweetened condensed milk
1 bag of coconut
1 t vanilla

(I also added a half a bag of chocolate chips)


Preheat oven to 350

You want to bake these on Parchement or Silpat

Using wet hands shape batter into little short cones or balls.

Check after 8 minutes..Bake until toasty brown. My oven is about 12 minutes.

Let rest on cookie sheet for 5 minutes then move carefully to a rack
These get harder as they cool. When they are hot they are very fragile.

1. I haven't ever heard of this kind macaroons, sounds interesting tho
I've always used the egg white recipe.

2. Thanks for posting this. My mother used to make these
all the time and when I tried, they stuck to the pan and made a big mess. Your instructions are most helpful. I'm allergic to eggs and this is the only kind of macaroon I can eat.

5. Alas...Me too!
This batch was practically inhaled by the three of us. They were very gooey and sticky inside just the way I love them. I actually looked in the pantry this morning hoping I had overlooked another bag of coconut. Thank goodness it's all gone! Although they are a little sweet for me...I just love these.
