You can make them with just veggies, with pork or chicken, or shrimp ... or all of it together.

Healthy, too.

3. Here is how I make curry...."never" fails.
I take any chicken, meat, fish, or tofu/tempeh,(in fairly large chunks), saute this in light olive oil and several tablespoons of any good curry paste. If I make a large pot of this I will use half a jar of the paste. My family prefers the yellow curry pastes....

Add to this any combination of veggies - broccoli, cauliflower, sugar snaps, green beans, onion, leeks, carrot, almost whatever (cut in bite size pieces)....and saute for a few minutes.
Add to this about 1-2 liters of chicken or veggie bouillon and 1-2 cans/cartons of coconut milk.

Let this simmer for about 30 minutes, until veggies are cooked.

We enjoy this with brown basmati rice, sometimes with pappadums, and a good mango chutney.

I usually make a very large pot of this because it tastes even better the next day and my family loves to snack on it!

4. I add curry to my chicken salad
white meat chicken, cut up
celery, sliced
real mayo
green or red seedless grapes,halved
curry to taste
chutney to taste
