Apple Cider Pork Roast
I made this for my son and his girlfriend tonight, so good, and what I like, easy.

Slice some apples and onions, put in the bottom of a roaster. Pepper the pork roast, I used a cheap one, but a loin would be good too. Put some cider in the bottom of the pan, just 1/3 inch. Cover it with lid, or with aluminum foil. Bake at 400 for 20 minutes, reduce to 325 for 3-4 hours.

In a separate baking pan, put sweet potatoes, red potatoes, onion, a little cider, top with apple slices. Bake for an hour.

Set the pork roast aside to rest. Add the apples and onions to the vegetables. Take the drippings and make a gravy, use some chicken stock if needed. I didn't need any.

I also served some whole frozen green beans, cooked and tossed with lemon and parsley.

Delicious!

1. That really does sound good. Kind of an American sweet/sour thing.
And simple, which is my usual mode for cooking.

2. More of that fall flavor really
The pork roast just fell apart, I'm going to use the leftovers for sandwiches. The sweet potato was delicious though. It's a great way to cook them and get a little sweetness without a bunch of brown sugar. We're not supposed to eat a lot of white potatoes, so mixing them with sweet potato is a good compromise. I guess, I tell myself it is anyway, lol.
