Anybody have a great vinaigrette recipe for a Greek salad?
Get away from me with the store-bought stuff; it never tastes quite right. I'm usually quite good at whipping up tasty vinaigrettes, but I can't quite figure out what to put in one for a traditional Greek salad.

Please, take pity on me and share your recipes! :-)

1. Mix red wine vinegar,

2. I don't know exact amounts
But I figure it would have to have olive oil, lemon juice, oregano and garlic. Just play with the amounts to taste.

3. With Oregano and Feta Cheese:
2 T. Red Wine Vinegar
1/4 cup extra virgin olive oil
1 T Dijon mustard
1 T fresh lemon juice
2 T minced and distressed fresh oregano (use half if you're using dried)
1 T minced and distressed fresh mint
2 small garlic cloves, mashed and minced
1/2 cup minced red onion
4 oz. crumbled feta cheese


I dress a greek pasta salad with these that is a real favourite. The secret is to dress the pasta while it's still hot, then wait for it to chill before tossing in the fresh vegetables.

And the pasta idea sounds good, too--any particular kind of pasta you use with this?

5. Yes! I make it with orzo believe it or not.
A pound of orzo (dry weight), an entire english cucumber, black olives (how many depends on whether I can get kalimatas as they're salty), diced red onion, grape tomatoes and of course, lots more feta cheese.

I've never put it on a table on a potluck and had it last more than 20 minutes.

6. Again, very interesting.
Will definitely have to try it with orzo! I love Greek salad (and any excuse to eat lots of red onions and feta cheese together is always a good thing), but have never found a vinaigrette recipe I'm happy with. Thanks!

7. I've had greek vinaigrette...
....that has pureed pepperoncini in it, and it was very good. Olive oil, red wine vinegar, yada yada, but also the pepperoncini. An excellent flavor!
