I have a bunch of peaches that I want to freeze

I have a bunch of peaches that I want to freeze
Do I have to do the sugar syrup thing or can I just cut them up and add an antioxidant and just freeze them?

1. Sugar syrup protects them
from drying out in the freezer. The antioxidant keeps them from turning brown due to (slow) oxidation.

Use both.

2. I just use dry sugar - they juice up enough by the time they freeze.

Once again I didn't read carefully. OP was wanting to avoid the sugar - I have done that too. Also I am a fan of freezing things on sheets and then bagging so you can use individual pieces.

And the post below about freezing whole peaches is intriguing - I am going to try that!

I think they're fine. I also did some where you just cut them in half and freeze them. Those would be fine for cooking, but I don't think they're as good as the sliced peaches. I think I did the blanch, then into ice, then the surefresh, then into the freezer bags.

That's why I do them myself, well that and the freshness, flavor, nutrition... But we have to cut out sugar. Although I do think stevia boosts the natural sweetness of fruits, the only place I think it may outdo sugar. My husband doesn't think so though, he can never taste the stevia at all. But then, I've never added sugars and salts to foods the way he does either.

5. Have you ever tried freezing peaches whole?
This will be my first post here in the cooking/baking forum, which I absolutely love. I ran across freezing peaches whole in a davesgarden.com forum late last summer. I tried it and it works!
Here are the directions...it is so easy, and the peaches taste just like they did when you first bought them...
Place whole peaches on a cookie sheet lined with parchment paper and freeze until solid, then place in freezer bags. When ready to use them, just pop into the microwave for 15 seconds, run under cold water a few seconds and the skin just rolls off. Use any way you want.

It does take up a bit of freezer space, but it is wonderful to have fresh peaches in the middle of the winter.

I wish I had a big chest freezer. Once my peaches were frozen, I placed them in individual Ziploc Freezer Bags, and then placed them in a large Freezer Bag. They kept beautifully, and they are really good. At first, I froze a couple to see if it really worked, and it did. So then I did 18 to keep over the winter (I only have a small freezer in the frig) and use for special treats. They were great!

Oh, I almost forgot. Leave the peaches out until they are ripe, like you would want them to be when you use them. Then freeze them.
