Speaking of bread and cheese - something good with Gjetöst
An absolutely delicious combination was taught to me by a friend from Norway.

The cheese is Gjetöst (pronounced YAI-toast) - you see them in the imported cheese section in squares wrapped in red.



(there are some other brands you can find, but this is the one commonly found in stores)

You slice it very thin. It's a softer cheese, so it takes some practice. Too thick and it won't melt properly.

Then you take a loaf of newly made hot homemade wheat bread (or other kind of whole grain bread) and cut a slice. It's important that it be hot enough (and steamy) to melt the cheese.

In a pinch you can take an artisan whole grain bread and microwave it to get something close to the same effect - hot and steamy.

Put the thin slices on the bread, let them melt for a sec, make sure it's not too hot to eat, and then enjoy. It's absolutely delicious.

Gjetöst is a brown goat's milk cheese, it has a nutty warm flavor unlike any other cheese you've had.

1. I love it on fruit
My favorite thing is to take a very cold pear cut in half and core it. Lay a few thin slices of gjetost on top and zap in the microwave for a half a minute. It's also terrific on apples. I have even added it to apple pie. Several thicker slices layed on top of the apples before you put the top on. It adds a whole other layer of flavor to the pie....like a salty caramel.

If you can get past the fact it looks like a hunk of brown soap on the plate it's an absolute winner of a cheese.

2. I've never had it but
based on the description I was just getting ready to suggest he have some nice berry preserves or a spicy apple butter with it but your idea with the pie sounds like heaven. I love a good cheese with apple pie. :9

4. My sister lived in Sweden for a year and when she came back she turned
us on to gjetost. I LOVE it. Haven't had it in many years, though.

It's best on real Swedish knackebrod, IMHO.
