pickled jalapeno rings with carrots recipe. I KNOW I have done them before, but can't find the recipe.

I just need to know proportions of cider vinegar to water, and how much salt, and processing time.

Anybody here do them?

1. I can't find the recipe that I used in NC to pickle serranos I grew there
but it was really easy. First, wash the peppers and cut a small slit into the side (or notch the end as is in your recipe) then pack them tightly into clean, sterilized half-pint jars. I also tucked in a couple of whole, peeled garlic cloves and a pretty leaf of purple basil for extra flavor. Boil the apple cider vinegar and salt together, top off the jars within a quarter inch of the rim, seal, and process in simmering water for about 15 minutes. Wait a few weeks before opening and WOW! Were they ever good. I used them to stuff olives for my heat-loving brother-in-law for Christmas. Extra special to garnish martinis. It is so easy it seems counterintuitive, but go for it! Good luck!

2. I just made the recipe I linked to in my OP. VERY tasty.
I have been nibbling on the leftover warm bits of carrot and onion that wouldn't fit in the jars, and there is one big whole jalapeno waiting to be chopped up for with my dinner tonight.

3. Thanks for the recipe. I bought a batch of plump jalapenos today for tacos. Have plenty to pickle.
