1. I use a wok
The rounded bottom means you need far less oil than in any western style deep fryer.

Just limit the batch size so you don't drop the temperature too far when you put the food in to fry.

2. that's a possibility
I wuz thinking about something electric that kept a constant temperature because my experience with donuts and fritters means that the first couple of batches are sub-par until the temp is right.

I need a new wok, though, too.

I'm wanting to make some cider doughnuts.

5. One wok problem is you might not have..
a stove burner hot enough to keep the oil up to temperature. It'll get up there, but won't return to the right heat fast enough when you put food in the oil. I've got several fry thermometers, but with my crappy stove watching them and trying to deal with the vagueries of hot oil makes the whole thing disastrous more often than not. My bigass wok holds maybe a gallon of oil which would help with that, but seems like a waste, and vastly more mess, when I deep fry so rarely.

Next trip to K-Mart I'm getting a small, cheap electric fryer.

4. We make a fried dough at Christmas (essentially, a yeast donut) .....
... and over the years (decades) someone in the family has tried every imaginable way to fry them.

Honestly, the electric fry pan is the very best thing going. Add the fat juuuuust deep enough to immerse half the thickness of your dough(nut), cook at the appropriate time and temperature, turn with tongs, finish and remove to drain.

You can get a cheap-o electric fry pan for little money.
