Cooks prezzies for me!
I got a bamboo chopping board that looks a lot like this one:



And some smaller santoku knives: (4.5" and 3.5 " ) . These will be great for my little hands. :-)

So tell me about these knives. I don't watch the cooking shows so I have no idea what is new in some of these things. I keep seeing them in the stores but I'm not really sure what the story on them is.

3. My first santoku knife was a 3.5 inch MAC
and I still use it daily. It's about 35 years old and has needed a careful sharpening with the electric/diamond gadget just once. A scrape along an unglazed pottery surface keeps it in decent shape, otherwise.

I have small hands and find the 7 inch santoku knives perfectly sized and balanced. I also use a Chinese cleaver for chopping and for surprisingly delicate jobs like peeling water chestnuts.

My set of Sabatiers languish in their wooden block. Sorry, H2S.

I can't get used to a Santoku. I have two of them. I use my 10" or my 12" french knives (both happen to be Sabatier) all the time. It is all a matter of what works for you.

Those Mac knives are quite something. We had a set of five - wooden handles and a sorta santoku shaped blade. They looked exactly like this except they had reddish rosewood handles.



They left with the first Mrs. Stinky.

I still miss the knives.

The price has gone (way!) up over the years but the quality has remained superlative. The only caveat is that they're so sharp you don't know your finger got in the way and you've cut yourself until you run into bone.

My own best knife right now is this one:
