I need some help
Edited on Mon Feb-14-05 07:15 PM by bearfan454
I went back and put authors on the recipes on Demopedia. There are a few I can't find even searching. If someone can help me determine who the authors are for these 4 recipes then I can update Demopedia and every recipe will have an author with it. I'm not adding any more until I get the okay from AZDemDist6. She is organizing it better. Here's the 4 I need help on who the author's are:

===Crowd Pleaser Chili===

*2 lb ground beef (85 – 90% lean)
*1 large spanish onion, diced
*1 28 oz can tomato puree
*1 28 oz can diced tomato
*2 oz. chili powder* (ground chilis are preferred - not the stuff with powderized garlic, salt, etc mixed in. Vann's makes a great 'dark chili powder' which is mostly ancho))
*1 oz cumin, ground
*3 cloves garlic, minced
*1 12 oz can of dark red kidney beans

Garnishes:
*grated Jack or cheddar cheese
*minced red onion
*lime wedges
*salt to taste*

In large non-reactive pot or dutch oven, brown the minced onion in olive oil. Remove. Brown the hamburger in two batches, breaking up as it cooks. Return all meat and onions to the pot. Spoon off some excess grease at this point. Add chili powder and cumin, garlic, tomato puree and diced tomatoes. Stir briefly then allow to simmer gently for 45 to 75 minutes.

Rinse and add beans, allow at least 5 more minutes for them to reach temperature. Taste and adjust salt. Serve with your choice of grated jack or cheddar cheese, minced raw red onion, sour cream and/or lime wedges. Makes about 8 servings.

A hot sauce like “Chalula” adds additional kick if desired. This chili can be also used as filling for burritos or over romaine lettuce as ‘taco salad’ and is excellent with corn bread or, even better, jalapeno corn bread. Great with beer of course.

and
===Beef stroganoff===

*1 1/2 lbs round steak
*1 lb sliced fresh mushrooms
*1 stick butter
*1 large onion-chopped fine
*1 can tomato soup
*1 6oz can tomato paste
*1 teaspoon salt
*1/8 teaspoon pepper
*1 teaspoon soy sauce
*1 cup sour cream
*noodles

Cut steak into very thin strips, trim off excess fat. Brown meat and add mushrooms in butter, add onions. Combine in a bowl soup, paste, salt pepper and soy sauce. Add to meat mixture, cover and simmer for 1 hour. Just before serving, stir in sour cream. Serve over noodles.

and

===Shepperd's pie===

Brown hamburger with onions and salt and pepper (this is your first layer in a casserole dish)

Then, drain a can of peas and pour evenly on top of cooked hamburger in casserole dish.

Then spread mashed potatoes on top of peas.

Top with cheese. Put in 350 degree oven until cheese melts.

and

===Chile Verde===

A really delicious stew, serve with rice, corn tortillas & sour cream.

*2 Pounds Beef stew meat, cut into chunks.
*2 Pounds Pork Shoulder meat, cut into chunks.
*4-6 TBLPS. Olive Oil
*1 whole head garlic, cloves cut into slices
*4 firm green peppers, cut into large chunks
*1 bunch of parsley, chopped
*3 large cans of whole tomatoes
*1 full bottle of red wine
*1 TBLSP. sugar
*1/2 cup lemon juice
*1/2 tsp. ground cloves
*2 tsp. ground cumin
*4 small cans Ortega diced chiles, with the juice.
*Sprigs of cilantro.

In large pot, mix wine, tomatoes, spices, lemon juice, 1/2 the garlic,parsley, chiles and their juice, bring up to boil and reduce the heat.

In large skillet, saute other 1/2 of garlic in olive oil. Brown the cubed meat. Keep heat low, and keep skillet covered in between stirrings.

Transfer the browned cubed meat & their juices to your other pot. Add the cubed green peppers. Bring up to boil, and reduce the heat, stirring occasionally for 1 1/2 hours.

Serve with rice, sprigs of cilantro, corn tortillas and sour cream.

Once I update authors to these 4 I will put the authors as I add more.
