What would happen if you let dough rise again and again and again....
The other night after years of trying to make the perfect, crispy pizza crust, I finally made one I liked.


I ended up letting the dough rise four times...so it made me curious....what would happen if you let dough rise over and over again? Would it make a difference or does something happen?

1. Seems like the yeast would be spent and then it might deflate. But I dont know
I discovered my pizza dough recipe because I didn't want to wait for a second rise on a focaccia. :rofl: I'd never last through multiple rises.

2. After awhile
there is nothing left for the yeast to consume and it wouldn't be good for anything but a flat bread (as we've all recently learning in our lessons from the Ain5 book.)

3. Eventually the yeast would deplete all the carbohydrate
in the flour and you'd end up with a nasty, vinegary mess.

You could salvage it if it didn't smell particularly awful by adding more flour to it because it would then be a sourdough starter. You just run the risk of the yeast having excreted enough acid to kill itself off.
