It's official! The first DU All C&B Project is

crepes. Crepes. (For all of you old enough to remember Allen Ludden and Password. :rofl: )

So, what's say we all work on our recipes, make them any time between now and the end of the month, as many times and as many different varieties as you like, or just one - it's up to you. Meet back here on March 30th and kick this thread up to reveal your results. Post your recipe with pics if possible.

Good luck, C&B'ers! And be careful out there!

Edit to add for all of those late to the party: savory dinner crepes, not dessert crepes. :hi:

so what would your advice be on choosing a recipe? :shrug:

I am thinking I might try this weekend - oh and do I have to have a crepe pan? I was under the impression that you do not.

3. Don't get intimidated
Crepes are simply thin pancakes.

Savory crepes are as much about the filling as anything. Yes, there are good crepes and bad crepes, but a serviceable crepe can be easily fashioned, even without a crepe pan. Use a skillet and you'll be fine. A non-stick jobbie of this general shape will work reasonably well - not perfect, but serviceable.

I want one of those! I haven't bought a crepe pan because I refuse to buy nonstick/teflon. Is that griddle heavy? I'll bet it makes great omelettes too.

6. Go nuts, and then
google "crepe recipes," and start having fun.

They are so easy, you'll laugh. And coming up with fillings for them, well, that's just flat-out, let-it-rip crazy. You can do whatever you want.

8. I think they are even easier to make than pancakes.
But similar to pancakes, the first one does not always look the greatest. This is my favorite one, because the cook gets to have it as a snack while making the rest of em!

26. no you don't need a pan.
If you have an iron skillet, that will work great. Or a griddle. Something on the heavy side that can be heated.

I have a round iron griddle that I'll use. I also have an iron skillet that I could use by turning upside down. You don't want the pan to have high sides because that makes it harder to peel the crepe out when it's done.

This is a great project: there is one theme but an infinite variety of variations. :)

7. Yippy yay o kayay!
A bunch of crepes can be made and chilled or frozen to be filled later. Just cool before stacking & wrapping. Of course, they are simple to make fresh. But having some already made is a start on a quick dinner after work.

11. I think the freezer space is not an issue.
They are quite thin. You can spread them with chocolate syrup, jam or a thin layer of whipped cream and simply slap them onto the walls or ceiling of the freezer. Takes no space at all.

But you haven't seen my freezer.

Here's how bad it is - I took a package of frozen chicken out - a nice bulky package.

I repacked the freezer.

There was still no room.

I have no idea how that happened. My freezer occasionally defies the laws of physics...............

Here are my two grandsons.



The fuzzy one lives with me now. Blondie will visit next month.

Fuzz sometimes has a sprtiz of ReddiWhip on the kitchen floor for "breakfast".

Blondie will learn what chocolate ReddiWhip is from Gramma soon.

How can anyone have an EMPTY freezer? I wouldn't be able to sleep if mine were empty.......................

22. I use it to store my Kitchen Aid ice cream attachment.
:rofl: So it's not TOTALLY empty.

I may make some cranberry sorbet now thats its warm. Then I'll have a little tub of yummy goodness in it.

28. I solved it by buying a small chest freezer for the basement.
I keep the bulky things down there--multiple loaves of bread or the extra ice cream that was on sale. I have a garden so stuff from that goes down there in the summer, too. It's only, I think, 15 cubic feet but it really helps out.

I had assumed we could discuss the crepes themselves during the interim... batter & so on, but that it was the other savory portion (fillings, etc.) that was to be a surprise. Am I wrong? Oops?

I actually have a crepe maker and I even know where it is. :rofl: I was unpacking boxes and came across it today.... I'll have to use Carbquick for a low carb version but I'm in for Crepes. I'm thinking crab and asparagus...we'll see...we'll see.

I got it on sale years ago for under $10. I remember buying it and thinking... Such a deal. It sat in the box in the back of the pantry since I brought it home. Honestly I would have forgotten all about it if it wasn't packed up in the flood remodel. We just got to that box this afternoon and I almost put it in the Freecycle Box...But I never used it so...I gotta try it at least once before I decide to get rid of it.

A crepe maker for $949.95!!!??? OMG!!

Reminds me... husband builds "artisan" wineries in Napa. One day, a winery owner sat down at a table under a tree and cracked open an $800 bottle of wine to share with husband. I asked husband how the wine was. He said it was very good, "but I don't know that it was four times as good as a $200 bottle." AS IF we drink $200 wine!

I doubt the French used anything but a great pan on a flame.

27. This will be an adventure for me. I've never made crepes. I'm looking
for recipes online and will try them out this weekend with my kids and their families as volunteer tasters and critics. We'll use any excuse to get together and eat. If the crepe making goes well, I might make a big stack and try more than one filling.

wind and the weather. When the wind blows hard like this for days on end with no let up, I spiral into a depression. I feel trapped in the house and I don't feel excited about or like doing anything. Adn the noise it makes swirling around the house is absolutely maddening! I hate it! x(

40. The best crepe recipe I have is my sister's manicotti...
...she got it from her late mother-in-law and of course we tweaked it.

I'm going away for couple of weeks, but will make it upon my return and post the recipe and pictures.

My husband, stepdaughter, son-in-law, brother and anyone else that finds out about it are going to be very happy!

41. That reminds me I used to make 'blintzes'.
Just crepes, really, filled with a mix of ricotta, sugar, an egg, nutmeg. Wrapped up and browned again in a pan with butter. Canned cherry pie mix over top... or raspberry jam.

I learned (from Cooks Illustrated) a very simple way to make ricotta this past weekend. I'll scale it down to a manageable amount and see how it comes out.

It was my fav along with Match Game!

Cooking Tip: After you mix the batter, let it rest for 20 30 mins. to let go of any air bubbles that will mess up your crepes.

I don't know if I have ever made a savory crepe. Yes, I know they exist, I might have even eaten one once or twice. But somehow the jar of Nutella always finds its way to the counter when I am making crepes.

For me the challenge won't be in the crepe making, it will be in the avoidance of Nutella!
