Creamed Chicken Recipes
Creamed Chicken Recipes

Here's the recipe I made last week. It's very good but VERY hard on the arteries... It's an old stand-by campbell's soup recipe, very easy. It's a recipe a friend gave me last week - I'll make some changes to it next time.

Easy Creamed Chicken
about 1.5 lbs chicen breast, cut into chunks (size your preference)
1/4 - 1/2 of an onion, chopped and sauteed in a little butter or oil
1 can cream of chicken soup
1 c sour cream
1 c cream
1 c shredded cheddar cheese
1 c peppers (green, red, etc - your choice)

Put it all in a dutch oven or crock pot, cook on low heat in the oven or crock pot till the chicken is tender. (I think I cooked it for about 2 hrs or so at about 300 degress in my oven). (Changes for next time, since I don't have a crock pot - the cream tends to curdle if it boils, so I'd hold it out until the chicken is done and then I'd add it and heat slowly but not boil). I also didn't use the peppers. You could substitute mushrooms for them, if you like - in the qty you prefer.


There are lots of adaptations you can make to this recipe - blanche some brocolli and put in a casserole dish, cover it with the chicken, then mix other ingredients and cover the chicken & bake covered at 350 for an hour or so - and you've got Chicken Divan.

Vary the seasonings for a different taste - try curry powder, tarragon, thyme or ???? (your choice)

This is another recipe that I've made often that's very good

Creamed Chicken

3 tbls butter
4 tbls flour
1 c chicken broth
1 c milk (or half&half, or cream)
1/2 tsp salt
1/2 tsp paprika
1/8 tsp pepper
1 tbls finely grated onion
1.5 c diced cooked chicken
2 tbls sherry (optional)

Melt butter, add flour & stir over low heat until blended (makes a roux). Combine broth & milk, gradually mix into the roux. Cook, over low to medium heat stirring constantly, until uniformlly thickened. (Simmer, don't boil hard)

Then set over hot water in a double boiler. Add seasonings and chicken and heat thoroughly. Adjust seasonings to taste. Blend in sherry just before serving.


Preparing Cooked Chicken
This is a recipe I've used for preparing cooked chicken

Place chicken breasts on a rack in a large shallow pan, skin side up
For each breast, melt 1.5 tbls butter
Brush each breast with melted butter

Bake in pre-heated 300 degree oven about 40 min, basting frequently. When slightly cooled, remove the skins and bone the breasts. Cover & refrigerate until ready to use.

1. both of those looke great!
Particulary the second one. I like to make my own white sauce & control the amount of salt, etc. I also love sherry.
