How to cook a steak?
My sister gave me a tenderized T-bone. Alton Brown of the Food network says to seer it on both sides for a couple of minutes in a really hot cast iron skillet, and then put the skillet and steak in a 500 degree oven for five minutes, or so (if I remember correctly).

Is this good? Anybody have any suggestions?

1. why not just broil it?
8 minutes on one side, 5 on the other for rare or a bit longer if you want it less rare

The only way to cook a thin steak is very quickly with high heat. The cast iron pan with the ridges on the bottom is best. Heat the pan until it's hot. Put the steak in and cook for 2 minutes. Then, rotate it to get cross-marks and cook for another 2 minutes. Turn and repeat on the other side.

Otherwise, cook it over hot coals on the bbq. I'd only follow Alton's recommendation with a thick steak. It would turn a thin one into leather.

3. Amen to that!
His method was a good one, but as you say, it incinerates a thin steak. If I recall that show, that slab-o-meat he used to demonstrate was at **least** an inch anna haff!
