What's for dinner? ~ Thursday the 19th Edition

Going to roast chicken and veggies. For real this time!

My last posting about making chicken and veggies for dinner turned out to be incorrect. I ended up roasting the chicken, but we made enchiladas instead. So tonight I'm going to get my roasted veggies.
I WILL NOT be sidetracked!
:)

I chop whatever veggies are floating around the house that roast well, toss with a little olive oil and sprinkle on kosher salt, garlic powder, black pepper, and poultry seasoning. I may add Italian seasonings if the mood strikes. :) The chicken gets the same treatment, and it all roasts in a 425 degree oven until the chicken is done. The bird comes out to rest and the veggies go back in to get a little color. Couldn't be easier and it seriously yummy stuff.

1. I've been inspired by hippywife's dinner last night
Stir fry veggies over not rice, but rice noodles.
Plus tofu. maybe some soy sauce and sesame oil, I haven't decided on that yet.
It's still pretty much in the planning stages.

4. Veggie omelettes. I've been without water today and I didn't
think about thawing anything from the freezer.

I have so many leftovers I should make them have raccoon night instead.

5. Roast pork loin, homemade applesauce, sweet potatoes and
sauteed brussels sprouts with walnuts. It sounds like a Sunday meal, but I had a frozen chunk of pork to use up. I buy loins on sale and cut them to size for 1 meal and freeze.

7. Panko coated flounder filet,
oven fries, apple, lettuce, walnut & goat cheese salad with honey-mustard viniagrette. Those leftover roasted veggies (if you have any left!) would make a great pasta salad. Good eatin'! :hi:

1-1/2 cups mayonnaise
1/2 cup sour cream
2/3 cup chili sauce(like Heinz Chili Sauce)
1 tablespoon fresh lemon juice
2 tablespoons minced dill pickles
1 tablespoon minced green peppers
2 tablespoons minced onions
4 teaspoons finely grated fresh horseradish or drained bottled horseradish
2 teaspoons worcestershire sauce
1/4 teaspoon Tabasco sauce
2 teaspoons sugar
1 pinch fresh ground pepper
1/2 teaspoon paprika
1 tablespoon minced parsley

9. Pizza night
from a local shop in town. They make as close to a New York pizza as you're gonna get in Central IN. My PA Dutch hubby says it's pretty darn close.

It was supposed to be Stroganoff flavor Hamburger Helper (I know, KICK me, but AALette asks for it every now and then), but then I got the urge for some pizza.

10. Vegetarian Couscous
Vegetarian daughter and boyfriend visiting. You make the couscous and mix it with chickpeas. Then in a second pan you saute a bunch of veggies: I did zucchini, peas, garlic, and I also threw in a few green grapes that were starting to turn. Then add some canned diced tomatoes, salt and pepper. Combine with the couscous and you have a one-dish vegetarian meal. Top with Parmesean. Served a large green salad with it and some white wine--yum!

Jamaican take-out. I live in a small town (30k) but we have a large islander population. Lots of good Jamaican food around here.

14. I've only been home for an hour.
I work as a volunteer at the coop pick up site the third Thursday of the month. Bill scrounged for what he could find and I ate cereal when I got home and put things away.

16. Well, at least I sorta feel I did a teense better than someone. I beat cereal.
I learned this morning that a dear friend passed unexpectedly. I finally realized I should eat. Canned sardines on crackers. A reason to keep such 'instant' things in the pantry I guess.

Good news today, though...I found out I will be serving as a volunteer next month!

I got the same kind of news last night. An old - since 1966 - friend gone.

I was busy all day today, but when it all settled down, I couldn't think of anything but him. Hot dogs for dinner. And more thinking.

My best spot today was delivery of a new refrigerator, so that helps.

Volunteer what? Congratulations!

25. Leftover meatloaf slices and a reprise of the asparagus soup
This time with non-fat dry milk instead of cream. Not quite as smooth, but still pretty good.
