finally, I've got this no-knead project mixed up and rising...



I'll have to put it in the fridge at 4 a.m. -- I didn't plan the timing very well.

doesn't seem to matter.....

I'm on the 12 generation that's in the fridge now, genXI is baked, one small loaf for us, a large loaf for a gift to my bread loving Chiropractor tomorrow after Mr. Ketchup was bragging last week

2. I have probably done 7 full batches.
My PROBLEM is that I tend to alternate a full batch of white with a full batch of rye. I don't want the carraway seeds in the white, so haven't been able to 'save over' the scraps for the sour flavor much. Think I'll need to just make rye in a separate half batch from now on & save over with the white to get the nice sour.

4. How much do ya reckon ya leave in the bucket?
I was thinking a total of roughly 1/4 cup? More? Does it mix in? (I have a beloved Danish dough whisk) They say 'scrape down the sides', but my bucket is pretty smooth and there isn't really anything left on the sides to 'scrape'.

5. not much
a few tablespoons maybe

all the dried crackly bits for sure, I kinda pick them off the dough and toss them in the water with the salt and yeast

I don't worry a whole lot, just kinda whatever's left....

6. I agree with this.
Once mine was huge (topping the 5.5 qt. bucket) in less than 90 mins and I put it away. Another time, I forgot about it for several hours. Didn't seem to matter much.

Family is gonna visit in a coupla weeks from the SF Bay Area. I can't wait to impress them with my miraculous bread!!!
