What's for Dinner? ~ Saturday April 11th Edition
Edited on Sat Apr-11-09 09:37 AM by Lucinda
Hola!

I think we're going to be doing breakfast tonight. Sausage, eggs, hash browns, and sourdough flapjacks. That's the plan for now anyway. :)

What's for dinner where you are?

1. Well, thank goodness!
Having a better day today, sweetie?

Not sure what we're having yet at all. I took a chicken outta the freezer for tomorrow. Gonna be a very rainy, stormy Sunday.

Wish I could get Bill to do breakfast for dinner. I can get him to eat an omelet or frittata.

2. My sister and b-i-l are coming to help me get ready for Easter
dinner (when most of the rest of the family arrives). So I have chili in the crockpot and will make some quesadillas and a salad of avocadoes and tomatoes :-).

3. You have inspired me.
It's raining here in the desert mountains today. I hafta go major marketing today for the ingredients for the luncheon Wed.

"Sausage, eggs, hash browns" sounds soooo good to me. And so it shall be.

4. Kielbasa, red cabbage, rice.
The kielbasa's from the store, and the rice is, well, rice, but the cabbage is homemade (sweet-and-sour braised).

I've also got some onions braising in beer.

5. breakfast for dinner is the best
Instead of the usual oatmeal, I had a big breakfast this morning, a veggie version of your dinner.

Tonight we're going to a hockey game (local team is in the playoffs), so we'll probably go out to eat or eat at the arena.

6. A treat for me tonight. My DIL is fixing tilapia filets on a bed of zuchinni,
green onion, red pepper and carrot. I don't know if she's going to do them in the oven or foil packets on the grill. Either way, it'll be tasty.

7. My kids used to love it when I'd fix breakfast for supper. Most mornings
I cooked hot cereal for them, so doing the full breakfast for supper was really special.

8. Going out to dinner, so don't know
When I was still working, we ate out at least once a week, and sometimes twice. Now cut down to once a month, so we appreciate it more.

9. It was a perfect day to grill
Finally a good weather day here, so we had Lemon, garlic and dill flavored grilled chicken breasts, parmesan cous cous, and CA blend vegetables.

We also had the last of my first batch of bread. You want to know what I decided to do? Instead of cutting off a grapefruit size ball like the recipe said, I molded the last of it into a bigger ball. It turned out just as good! I did put a little more water in the pan, though.

My husband practically does cartwheels when he smells that bread baking, LOL!

10. eggs benedict & asparagus
It has been a very, very busy day. This morning I went to the Russian grocery store to find some unusual Easter candies for fun. Well! The place was filled with Russian families loading up stuff for their Easter feasts. I had a blast watching what they put in their carts. Lots of smoked fishes of various kinds, cheeses, big tall Easter cakes, lots of green cabbages, cucumbers, fresh dill, pickled vegetables of all kinds -- wow. And the candy! Probably 16 feet of wall space devoted to shelves with bins of gorgeous wrapped candies. I can't even describe how colorful and beautiful and varied the wrappers are. The experience was almost as good as being an embed in an episode of Anthony Bourdain. (almost)

I bought almost five pounds of candies. Ha!!

Lots of pie baking in the afternoon. For the first time in that convection oven, I made meringue shells to make individual angel pies. They are a little browner than a regular oven. I went back tonight after supper to make the lemon filling, and will put them together early in the morning.

So dinner was eggs benedict and asparagus. The asparagus was SO GOOD. Very flavorful. I forgot to get milk, though, and that's not good. I often need a glass at bedtime.
