Did he manage to come up with anything that isn't in "Crust and Crumb?"

2. he had a couple good ideas
let bread rise in oven with a pan of hot water

use a large unglazed planter pot drain pan instead of an expensive "cooking stone"

use a temp gauge to test doneness (205-210)

any good serrated knive can cut the top of the loaf prior to baking (no fancy razor needed)

I taped it and will watch again, he likes rapid yeast biga allowed to rise overnight in the 'fridge rather than proofed active dry yeast

I haven't read "crust and crumb" so I don't know whats in it :shrug:

"Crust and Crumb" is a bread book (with a short section on quick breads) that looks at bread baking from a theoretical viewpoint, and discusses the difference between ordinarily edible but not terribly exciting breadmaking and how to do outstanding breads. It's a successor to the Brother Juniper bread books. It's hardcover and worth the bucks.

It sounds like Alton might have a camera in my kitchen. He's using all my tips and tricks. Oh, except I don't use a temperature gauge. I dump the bread out of the pan or off the stone and give it a thump. If it's hollow, it's done.
