So What's Fer Dinner?
We're having homeade pizza - I dug out the last of the homeade sausage and I'll cook it up and scatter it on half with the Mozz, basil and 'maters. (It's Alton Brown's sausage recipe we use our KitchenAide on).

I'll pick baby spinach and lettuces for a salad to go with. Watermelon is chilling in the frig to complete the dinner.

It's rainy, so it would have been a good chili or enchilada day, but I already planned the pizza and kidlet is counting on it.

1. Pinto beans.
Got them going in the crockpot. Gonna have some diced raw onion on top of them, slice a few of the first local tomatoes, and make some cornbread with corn kernels in it.

2. meat loaf
busy, busy day here. A high school graduation in the family tomorrow, with family brunch. The weather won't allow a picnic, so we're improvising buffet.

I'm making a sheet carrot cake in the shape of a banana (don't ask), a lemon cheesecake, blueberry-cornmeal-brown sugar muffins, tiropites (greek spinach turnovers), a mass of deviled eggs, roasted baby redskins with two dips, carved watermelon with fruit salad, green and gold punch, etc.

Whee!

4. Holy cats you make me feel guilty
I DID carmelize some onions and pre-cook the sausage (and no I'm not putting 'shrooms on it -if you want 'em, YOU make it!), fresh maters (too early for 'em in MN, so they are greenhouse storebought). It's resting before pre-heating the oven.

Those blueberry corn muffins are intriguing. I still have 5 lbs of masa flour staring me in the face.

I did the graduation thingy eons ago for kidlet one with make your own tacos or nachos as the main course and cowboy caviar with sides of refrieds. I'm sure glad that is over with. Second kidlet is still 4 years away if I don't throttle him before then. Teen boys are SO different from Teen girls.

which is not that bad. A local Kiwanis grill great burgers and a sports team roasts corn-on-the-cob.

We split the funnel cake. :D

9. Cooking for my new boyfriend tonight
This is the first time we've eaten at home, always gone to restaurants so far for the past three months. Fun, but fattening.

Tonight's menu:

Appetizer
Tart tatin of sliced roma tomatoes fresh goat cheese slices and fresh basil from my pots outside.

Main course:
Salad of herbed greens, radishes, bell peppers

Jerked chicken thighs with jerk seasoning and lime

Wild rice medley

Dessert:

Angel Food cake w/ fresh strawberries and semi-sweet chocolate ganasch.

11. My son has burgers and sausages on the grill, DIL is putting together some sides
and I baked pineapple upside down cake for dessert and whipped some cream to go with it. It gave me a chance to introduce my 2 yo grandson to the delights of licking the beaters.

12. I wasn't feeling inspired
When the furnace has to kick in on the first weekend of June it doesn't make one happy. Gray dismal day.

So - it's salmon salad, nothing special, but the cat's always happy when I make it. It's just the Suddenly Salad stuff but I use plain yogurt, dumped a can of garbanzos into it, mayo and the canned salmon. There's a boule of AIN5 that'll go into the oven after a bit. And that's it. If someone can send some sunshine to Minnesota, I'd appreciate it.

15. If I could send some sunshine your way, I certainly would. We had
several weeks this spring when it was either raining or gloomy. It makes me want to just curl up and do nothing. The last couple of weeks have just been glorious with lots of sunshine and just a few showers. We're usually into summer weather by now, but it still feels like springtime.

16. If this gray ever lifts
I'll be making that slaw with the ramen noodles - should be a good lunch for hubby. You know what I mean, it's the Chinese cabbage (napa?) with vegies, soy, rice vinegar, sugar, etc. If I send it with some AIN5 he'll be in great shape.

Now it's on to the Tony Awards!

18. Hmmm. I may forego "dinner". I just got back from a nice 1 hour walk
and along the way I stopped at Yogen Fruz and had a medium tart soft-serve lowfat with strawberries and respberries and dark chocolate chips. I'm not gonna be hungry for quite a while, lol.

Now I have to go figure out how many Weight Watchers points that whole thing was......

20. Depends on whether my stove yells at me
This morning it started beeping while I was cooking breakfast and showed an error code in the display. We turned off the circuit breaker and left for a track meet (Prefontaine Classic - yay!) so I'll see if it's still acting up when I flip the breaker on again. I've got chicken thighs, new potatoes and asparagus and if the stove isn't operational I'll cook the stuff on our portable propane picnic grill.

We had stuffed green peppers that I made with leftover Taco seasoned ground beef, rice, salsa and cheese. m-m-m

My favorite stuffed pepper though is made with Jambalaya rice, shrimp and chicken.

22. I fixed the best
baked ziti with eggplant. Made two big baking dishes, filled right to the top. Used up all the mozzarella in the house, so that's on the shopping list again.

But, it was sensational. I picked at the crusty edges (my favorite), but then let them cool, and now they're in the refrigerator. Tomorrow, reheated, they'll be a great dinner.

Tonight, it was bacon cheeseburgers and fries and slaw.

Lazy Sunday evening .............................

Sounds good to me, but I cannot make a good pizza dough.

I make a meatza-pizza. Crust is not a new recipe, as I have at least eight that are similar.

Take a pound of burger, mince a small onion and a garlic, add Italian spices, (IMPORTANT - 1/4 teaspoon crushed funnel seeds) and a third cup of bread crumbs and an egg. Mix with hands and form into a clear glass pie plate around the bottom, all the up the sides and all around the rim and bake at 375 for 15 minutes. Using Ove' Gloves to protect your hands or similar, drain the fat from the pie plate.

Drain a can of tomatoes and add some more Italian spice, garlic, black olives and a touch of dried red peppers and 1/2 cup Parmesan and spread it on the meat. Add whatever else you like on a pizza like mushrooms, olives, pepperoni, whatever. Top with 1 cup mozzarella cheese. Bake 20 more minutes.

Easy peasy crust-less yummy pizza. Just made similar yesterday. Tasty.
