A very nice and easy and healthy summer salad
1 cup chopped pecans (baked for five minutes then cooled)
1/2 cup mayonnaise
1/4 cup sweet onion
2 tbsp chopped basil
shake of salt, shake of pepper
4 cups cooked chicken or turkey breast
4 small peaches peeled and diced

Mix all ingredients and refrigerate for a couple of hours. Serve on baby lettuce, garnish with blueberries or blackberries.

I made it last night and my wife loved it, so I'm the kitchen hero at least for one day. I make good stuff about 8.3% of the time.

Found the above recipe in the current edition of Southern Living.

1. It sounds delicious.
I have plenty of cucumbers this year and found a recipe for cucumber salad.
This is my version.
diced tomatoes, no-salt canned will do, but drain the juice.
two cucumbers diced
2 tablespoons of fresh basil, chopped
sliced onions or you could use green onions
diced red, yellow, orange or green peppers, I like to use yellow or orange to make the salad more colorful.
1 can of black beans rinsed and drained
1/3 cup balsamic vinegar
1/4 cup olive oil
minced garlic (opt.)
It is great fresh, but even better the next day.
