I have pea pods and a can of pineapple chunks.
What can I do that would be really good? I was thinking of combining them with white rice--any ideas?

1. You could do a sweet and sour something or other
with the sweetness coming from the pineapple and the pea pods tossed in for color.

we eat stir-fried veggies and rice with no sauce except a splash of soy when we eat it. But once in awhile for a change of pace, I love to mix up a little teriyaki sauce with garlic, cilantro (optional), pineapple juice, soy sauce, vinegar, and a little brown sugar and thicken it with a wee bit of corn starch. I also toss in the pineapple with the veggies toward the end.

3. hm, yes, teriyaki seems just the thing.
I could do a teriyaki stir-fry with both pineapple and the pea pods (from garden), and maybe some chicken and mushrooms too. Thanks for the idea!

4. I'd fix the rice, and let it cool, but not chill -
room temperature - then I'd blanch the pea pods for about 20 seconds. Rinse in cold water, and cut into bite-size.

Toss them with the rice, maybe some scallions, and then olive oil and whatever vinegar pleases you.

That, in our house, is a fine summer dish.

Have any canned black beans around? Add them, too. Or any beans, corn, whatever vegetables you have on hand.

Top with peanuts, if you've got them. Or coconut......................
