Made a wonderful summery fresh corn salad this weekend:

Made a wonderful summery fresh corn salad this weekend:
6 ears corn, cooked and kernals cut off
1 large juicy tomato, diced
1 red onion, diced
1 green pepper, diced
3 green onions, sliced thin
Some chopped Italian parsley and basil
Dressed with a red wine/olive oil vinaigrette and lemon juice, a little dried thyme, salt, pepper

The sort of thing I absolutely LOVE to eat in the summer.

1. Seasonal eating just can't be beat by anything else.
Oh, sure you can make a salad like this in the winter but it will never, ever taste as good as it does in the summer. The veggies are fresher and tastier than they will be all year. :9

the local corn and tomatoes come in... we're just now finishing the fresh strawberries - oh what a year! sweet and juicy..
then our local peaches - and I'll eat them standing over the sink..


and our once yearly treat of a BLT - mmmmm

3. Mmmmmm, BLT's. Thanks for reminding me. I have a pound of bacon
waiting in my freezer for the right moment.

And I'll soon make my annual purchase of a head of iceberg lettuce......
