Perfect summer sandwich for a hot summer night.

Perfect summer sandwich for a hot summer night.
Toast slices of the bread of your choice. Allow to cool.

Mix together 1 part mayo and 2 parts coarse stone-ground dijon mustard. Slather on the cooled toast.

Top with slices of fresh, homegrown tomato, lightly salted, and slices of a nice creamy avocado and thin slices of the cheese of your choice (we used havarti.)

Return to toaster oven just long enough to melt the cheese but not heat the tomato and avo.

Serve open-faced. Very yummy! So simple, yet Bill thought it tasted like the best sandwich ever. LOL

I made a good one yesterday on marble rye with mayo, salt and pepper and pan-toasted capers sprinkled on top. Heaven.

2. I've been getting health food store smoked turkey
and jack cheese and doing rollups with veggies and whole wheat tortillas.

It requires a quick zap in the toaster oven followed by minimal assembly with the veggies and a roll up. I don't even dirty a dish.

It's been in the upper 90s forever with no break in sight, nasty hot high pressure area camped over the Four Corners and blocking the monsoons.

I'm getting really sick of summer.

Here in MD, summer only began a few weeks ago! And only found decent tomatoes YESTERDAY, so all our wonderful sandwiches and salads are yet to be, here!!! (DID make a good salad yesterday!)

toast, mayo and tomato is most of a BLT. Delicious.

And another sandwich that I like is sliced cucumbers, sliced tomato, sliced green bell pepper with mayo, dill and black pepper on whole wheat bread. That's one of my all-time favorites.

6. With you, except for the mustard

I'd use smoked gouda and maybe roumelade sauce (generally hate mustard).

I love food on toasted bread. I like combining temperatures and such - hot against cool, cooked against uncooked, and toasted bread with cool interiors fits the bill (no pun intended).

Not a huge avacado fan, but I could deal with it in this instance.

I'd be inclined to add sprouts. Not everyone likes them, but I do. That, or cucumber slices. Or both!

7. I really love mustards.
And I thought the sandwich could use a subtle punch. Mixing the mustard with the mayo achieved that without overpowering the sandwich or, going the other way, being too bland.
