3. Anything with red meat sounds awful to me

The rest of you can have my share. You can have my share of pork and commercially raised chicken, too.

I have no problem with what's on it, but instead of horseradish mayo it should have been Boar's Head Dijon/mayo/cracked pepper.

Since I've cut back on my meat and eating overall I find that when I need to have a Burger I want a "Pure" one. Great chuck cooked medium rare with a slice of "good" Cheddar, fried onions, tomato, leaf lettuce, ketchup and mayo...Right now that's my idea of a "perfect" burger. Too much stuff...mucks it up.

Now I do like a little horseradish mixed in with the Mayo for a sliced beef sandwich.

Blue cheese is something I enjoy in a savory cheesecake, on a plate with some apples or pears or in a salad with romaine, pecans, and some fruit. With Beef....Not so much.

6. Overkill

Horseradish OR blue cheese OR red onion marmalade, not all three. I like all three individually, but I can't see them going together. Bacon goes with just about everything, though.
