elderberries -- any hints?

elderberries -- any hints?
Has anyone ever worked with elderberries in recipes? There are some big bushes here. I don't know when they are ripe and what the best recipes are. I know that an essence of elderberry can make a lovely refreshing drink with some club soda and simple syrup.

2. My mother used to make the most amazing elderberry jelly.
I remember picking them as a kid and they were definitely soft and deep purple when we gathered them. I believe she simply followed the recipe in the package of pectin. One thing, however--it did take quite a few elderberries to get enough juice to make a batch of jelly, but oh, it's worth it.

3. From one of our coop producers:
Elderberry flowers and the berries have long been an herbal treatment for colds and flu, and the berries are good for wine, jam, cobblers, and just eatin' plain.
