Easy chicken fajitas
I found bags of frozen green, yellow & red sweet peppers plus onions. So I sliced chicken breast in small pieces, put them in a gallon ziplock bag with a couple of bags of the peppers/onion combo, added red chili powder, lots of powdered garlic and some oil. Squished it around a lot to mix and left in the fridge to marinate.

We've been taking some out when we want a quick meal for several days now. I'm ready to freeze the rest in smaller bags.

It's been nice having the chicken fajitas ready to fry up any time. I just haven't been in the mood to cook from scratch lately.

1. I know how you're feeling.
I got off from an exhausting day at work and then went and did my volunteer gig for our food coop. We had to unload the truck, sort the dry stuff and the invoices, arrange the coolers for the refrigerated and frozen stuff, then help the new folks picking up their food for the first time learn how it's done. Thank goodness they have to go around and pick their own stuff.

Leftover peach cobbler...it's what's for supper! :rofl:

3. I use medium size white tortillas to make them
We just try to find the lowfat kind. Sometimes I get the whole wheat or even whole grain tortillas.

Use them in all kinds of things. Never thought about freezing the chicken mixture separately, good idea.

7. We used to just use those veggies for omelets
But then I picked up some ready mixed chicken fajita at my favorite Mexican market. I realized I had the easy fixings with that bag of frozen peppers & onions. No more slicing the peppers which is a pain when I'm being lazy.

I especially like that combo when it's on sale for only a dollar a bag. :D

8. Paul Prudhomme makes a great Fajita Seasoning
Fajita Magic. I use it on the chicken before its cooked and then on the peppers and onions after they're cooked. Great flavor and so easy to use!
