This recipe needs a little love - maybe.l
Edited on Fri Aug-21-09 04:25 PM by madmax
As most of you know the Princess is arriving in NC on Sunday. I told not to eat junk at the airport that I'd make her dinner. She asked for Chicken Alfredo.

Here's my recipe based on my ability and what's here:

1 Box of Barilla Fettuccine
1 Jar of Bertolli Alfredo sauce

Any ideas on how to kick it up a notch or add a twist. If not this is what she getting with salad and Italian bread. I've made this for myself many a times. Bluesman isn't into creamy white sauce dishes, I just make it this way for me. EZ

1. where's the chicken?
Just askin' :-)

If I wanted to kick that up, I think I would put some white wine in the sauce. If no wine, then maybe a tiny speck of grated nutmeg and some toasted almonds. The little crunch would be good.

5. Chicken and steamed broccoli does it for me
Asparagus tips will work if they're fresh and not cooked to death.

7. I thought of just popping them in
at the last moment and toss. I like the crunch. This dish sounds so good, that if it tastes half as good it will be a keeper.

2. I'd just "freshen" up that sauce a little
Edited on Fri Aug-21-09 05:47 PM by The empressof all
I'd probably add a good heap of freshly grated Parm, a hit of nutmeg and maybe a speck of additional cream to the sauce. (I've found the bottled white sauces a bit too gloppy for my taste and loosen them up a bit) You can also enrich it even more with a bit of butter :wow: Top it with a bit of fresh chopped Basil or Parsley and you've got a great meal.

If Princess won't turn up her nose you might even throw some Broccoli in it! Oh..and of course you'll want to add the chicken. :hi:

4. I like that!

More butter, more cream, she'd be in heaven.

I think I'll do this:

Add a little more:

cream, butter, fresh basil, nutmeg, asparagus tips, and a dish of parm on the side if she so wishes. ;)

I'm starving, I want it now! Having burgers tonight - been preparing the guest room with goodies.

Thank ye, empress

6. Peas -
I always toss fettucine Alfredo with peas, and a handful of chopped, nicely crisped bacon.

Funny, your recipe for the sauce is the same as mine.

(Ever try Newman's Own Vodka Sauce? Sublime with rigatoni and sausage...............)

10. Get turkey bacon -
I've had it, and if you rinse it, it's not that salty.

But, it tastes just fine in a dish like this.

What - the Princess is kosher?

12. What a versatile dish!
Who knew. I'm keeping a list of the main ingredients and all the variations. Very interesting. You guys are precious.

Sure wish I had my normal brain function back. I feel like such a stoopid sometimes. I wonder if I picked it up slumming in freeperville. I've been going through on and off crying jags all day. :sigh: It'll pass. Noives, ya know.

15. Lose the 'jar sauce'....make the alfredo from scratch......
Here's the BEST RECIPE so far. (I've had a better alfredo sauce than this one, but couldn't manage to snag the recipe. This is the best one in my repetoire thus far):

17. This alfredo sauce sounds familiar.
I've used shrimp and fresh mushrooms in the sauce - that's tasty too.

16. Here's what I do
Very similar to other posts

1 lb. chicken cut in pieces
Lemon pepper seasoning

Sprinkle seasoning on chicken and saute until no longer pink

Add jar of alfredo sauce of choice
Grate FRESH NUTMEG into sauce

Cook fettucine al dente, drain.
Microwave frozen broccoli florets

Mix it all together. YUM!

My 7 y/o picky eater asks for it all the time. :9
