Just pulled all the green tomatoes. Tomorrow's the day

Green Tomato Cakes and Green Tomato Mincemeat! The SO is at Costco right now stocking up on Pecans and I'm digging out the Nesco. We had such a great crop of tomatoes this year our greenies aren't as plentiful as last year but I should be able to crank out a half a dozen loaves and a few quarts of mincemeat. :bounce: :bounce: :bounce:

I only got to make one green tomato pie this year and it was to give to someone else who was taking care of her dying mother. Bill doesn't care for it, will eat a little of it, so no sense in making it just for myself.

I only had enough eggs to make one batch so I have six small loaves going. I have the Mincemeat going in the crockpot and the SO is stopping at TJ's to get me more eggs and raisins. One of my forgotten apple trees had far more fruit than I usually get from it so I'm hopefully going to do some apple coffee cakes too. I can't wait till next week though because then I can make cocoa mincemeat bread and chocolate chip mincemeat cookies.

So I'm checking on the DU for a few minutes then it's back to peeling apples and chopping green tomatoes.

I have enough tomatoes for two more batches of cakes if not three so I'll be pretty busy with this all day! God, I love cooking and baking.
