Good day to cook. Grey and rainy here so I'm cooking and freezing.

Good day to cook. Grey and rainy here so I'm cooking and freezing.
Just made beef stew, lentil soup, and corn chowder. All were very inexpensive to make each will serve me for 2 meals.

I tend not to plan my meals properly and am trying to have dinner ready to take from the freezer.
A salad, maybe a roll or chunk of french bread and I'm all set. I'll be trying to make something every week that I can freeze for those days when I forget to take some meat from the freezer. Any of todays creations can be zapped in the microwave.

I just did a rough estimate. Six meals for under $10.00. Not bad.

3. I made a pot of pasta fagioli this morning.
It's very inexpensive to make and goes well on a cool rainy day.

I picked up some ham ends at the meat market to make a pot of bean soup next week. Temps are supposed to be in the low to mid 50s and that's soup weather around here.

4. Another way to do it
. . . is to simply make too much any time you cook so you have a couple meals to squirrel away. As my kids leave the nest (yo-yo daughter can't quite get the hang of it, but she'll manage one of these times), I get frustrated because after cooking for a family all these years, I can't get the hang of dinner for one. Then it occurred to me that I wasn't stuck having chili five nights straight--I could be freezing stuff in little containers and essentially make my own teevee dinners (except it's stuff I like). Very liberating!

5. I so agree.
Who knows how to cook for 1 or 2? Most "everything" is portion-sized for 4 servings.

I do the same as you. Cook once and freeze individual meals. Works out great.

10. what we do is sort of "leap frog" the leftovers.
We are empty nesters and we do it like this: Monday I cook something with 4-6 servings, and half gets saved. Tuesday I cook something else--save half. Wednesday we have what's left of Monday's meal. Thursday we have what's left of Tuesday's. And sometimes some other idea comes up and gets inserted. Like if we decide on pizza on Thursday or we want to eat out or get take-out Chinese or something, then Friday we have what's left of Tuesday's.

This works if you are okay with two of the same meal in the same week. Of course the sides get changed around or new ones added, so it's never exactly the same meal--just the main course.

6. I do that a lot too
With so many evening meetings, it's good to come home to something that DH has thawed and warmed according to instructions. Big batches of this good stuff is cheap, and convenient too.

7. It feels like fall here, too. So I have some boneless pork ribs in the
crockpot with red cabbage, onions, and apples. Smells wonderful.

9. I got a whole wild caught keta salmon for $2.99/lb
A couple of slices of filet for tonight and day after tomorrow. The rest poached for salmon patties to be frozen. The non-filet parts to be cooked for a court bouillon for chowder. Probably 1-12 meals for two from that sucker.

When you are in a hurry, there is nothing quite like savoring your labor for another day. I think you have a plan!
