Did someone mention Persimmons the other day?
I came across a recipe for Persimmon cookies that looked interesting.


Yield: Forty 1-inch cookies
Time: 1 hour

1/3 cup organic butter

1/2 cup Sucanat

1 egg

2 cups whole wheat pastry flour

1/2 teaspoon ground cloves

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1 teaspoon baking soda

1 cup persimmon pulp (about 3 medium-size persimmons)

1 cup chopped nuts

1 cup dates, finely chopped

Preheat oven to 350°F. Combine butter and sugar. Add egg and beat until well blended. In a seperate bowl, combine flour, cinnamon, nutmeg, cloves and salt. In a small bowl, dissolve baking soda in persimmon pulp. Add flour mixture alternately with the persimmon mixture to the butter, sugar and egg. Fold in nuts and dates. Drop by teaspoon onto lightly greased cookie sheet. Bake for 15 minutes.

Sucanat is a non refined cane sugar.

1. They sound tasty. I might eliminate the dates b/c I think they could
overwhelm the persimmon taste.

I wonder what kind of nuts the recipe author used? I have some leftover almonds that need a 'home.'

3. I wish we could get some.
There all over the place here but most of the ones that are easy to get to are right out on the road. Definitely not excited about eating fruit that's been dangling out over the road in all the vehicle exhaust as it's been growing.
