3. Flank Steak
I'm doing a quick flank steak broil, with oven french fries, green salad with romaine, cukes and edemame, and sliced oranges sprinkled with coconut for dessert.

6. Dinner
Chicken breasts marinated in teryaki, basmati rice made with vegetable broth, plain carrots and a hunk of boulle bread from the Denver Bread Bakery.

Dinner while listening to Bob Kincaid out of W. Va. So nice to hear West Virginia Dems calling in to his program. Found him on the DU Links page. Here's his url direct http://www.headonradio.com/

7. I'm all alone tonight
It's spring and every Tuesday and Thursday my husband (assistant coach)and grandson have Little League practice or a game. Tonight's practice, so after, they'll probably stop by Sonic for a burger and shakes.

I made myself a baked potato, with butter, sea salt, ground pepper and added some French onion chip dip instead of sour cream. I didn't want to open a new container of sour cream, in case I need it for an ingredient in something during the week. Oh, and a 100 Grand fun size candy bar for dessert.

8. Beef Stew with Cheese Dumplings
I made a roast in my crockpot over the weekend, and shredded the leftover meat. Now that I'm working part-time, when I get home this afternoon I'll put the beef in a stewpot along with the carrots, taters, celery, and onions, add a can of chopped tomatoes, and set it to simmer.

When it's near dinner time, I'll put together some dumpling batter/dough and drop them in.

With all those veggies in the stew, we won't need a salad.

ONE DISH DINNER! Yay! Less washing up!

9. Spanish rice casserole
Brown rice (cooked), tomato sauce, sauteed green pepper, onion, garlic and celery, lots of grated or cubed sharp cheese and cheese sprinkled on top, salt, pepper and cayenne....may add frozen, fresh or canned corn, any kind of bean like kidney or garbanzo - 45 minutes in oiled casserole dish in the oven and you have a family favorite vegetarian meal.

Green salad on the side.

Son begged for banana bread, so that just came fresh out of the oven.

10. Out....
I have a monthly meeting tonight held at a wonderful local restaurant called Burnt Toast. They make all sorts of interesting dishes and I never know what will be in the menu from night to night.

Last night was Calzone made with meatballs, goat cheese, ricotta salata, a half-dozen veggies and salads.

took alot of advice, and checked a bunch of recipes. Combined the ingred. and seasonings i preferred and am giving it a go.

depending on how it goes, may repeat friday nite with daughter and SIL for dinner.
