Chile Relleno Casserole
This is good brunch dish, too:

1 Large can Ortega Whole Green Chiles
2 Pounds Monterey Jack Cheese grated
10 egges, slightly beaten
2 TBLSP. Flour
1 TBLSP. dried mustard
1 Cup milk


Take chiles from can, slit open.Discard any liquid.
In large butter- greased cake pan, layer 1/2 of the
green chiles in bottom of dish
Cover with 1/2 of the cheese.
Repeat.
Mix eggs, flour, mustard & milk.
Pour over layered chiles & cheese.
Bake 350 degrees for 45-60 minutes, or until lightly browned .

Serve with salsa & sour cream.

*******************************************************************

Make sure your cake pan is really deep. I add another small can of the chiles, and an extra tablespoon flour.

I had that recipe a million years ago, and lost it. Been kinda wishing for it for quite some time.

Also TX for the hint about extra chilis.
