This weekend I made some pickles:
Zydeco Geeen Beans (a pickled bean with garlic, dill, chili peppers and mustard seed. They will be ready to sample in a month - I can't wait. I LOVE regular dilly beans.

Quick Refrigerator Dills made with little Persian cukes (because Kirby's seem to have vanished, amd the last several times I got them they were gigantic and seedy and overmature anyway) and a basic vinegar/salt/sugar pickling liquid, and dill and garlic in the jars. No processing involved. They will be ready to eat tomorrow evening.

Later this season I will do pickled jalapenos and pickled eggs. If the weather stays cool.

Made some fresh guacamole because avocados are on sale for the first time in a long time.

1. My but weren't you
just the busy lady yesterday! It all sounds so delicious! I do hate that wait for the pickles, too. Such a long time to know how they came out.

:hi:

4. I have lots of recipes that give a soft pickle. Don't care for that.
I like them CRUNCHY. In a pinch I will process them, but even 15 minutes pasteurization makes for mushy.
