Who likes pie?

1. Great video
Loved it. I'm hearing impaired so I usually avoid videos, they aren't CC. Your video was perfect - as good as CC. Easy, clear step by step w/words and measurements. You go girl, make more vids!

Have never baked a homemade pie. Been wanting to try it for months now but, always something comes up that I end up saying, ok - maybe tomorrow. It's either arthritis pain or one thing or another.

I am so pleased that the videos I've been making are good for the hearing impaired. I had not considered that angle before and am happy to be helpful. You'll make a pie on one of the days when your arthritis is not kicking up. I find that the first time I make anything takes the longest time, once you get a handle on how simple it is you'll understand where the phrase "easy as pie" comes from. Thanks for checking out the video. I've just learned to make them on IMovie and now that I'm familiar with the program it's not the hair-pulling challenge it used to be. but my dumb dialup wouldn't let me see the pics.

The recipe is one I definitely want to to try.

I used to have the ultimate pie crust recipe somewhere but I've lost it. This one of yours looks like a good, easy one that shouldn't fail.

Man, I had an aunt who made this melt-in-your mouth strawberry cream pie on the most delectable crust.

Don't you wish those old gals and guys were still around to teach their secrets?

4. Actually, for the video I had intended to make a
strawberry cream pie, but no strawberries were to be found in the market that day. I'll give you the recipe, though.

1 - Sure Fire Pie Crust (or other pie crust) with chocolate painted bottom

Filling:

8 oz. cream cheese, softened
1/4 C. superfine or confectioner's sugar
1 Tsp. (or more, to taste) grated orange peel
A squeeze of orange juice
2 Tbs. cream

Beat mixtureuntil fluffy
Spread over chocolate in the pie crust
Cover and set in the refrigerator until it sets up (2 hours or more)

1-Pint fresh strawberries*, washed and stemmed
1/4 C. raspberry jam melted with Cointreau or orange juice


*If you have big berries slice them, if you have small berries use them whole

To assemble pie:

Arrange the berries over the cream filling - With the sliced berries the finished pie will look like a flower
Use a small paint brush to paint the jam glaze on strawberries.
Cover and chill until time to serve.

I don't know if this is the one your aunt used to make, but it always draws raves. :9

the one my aunt made had a cooked creme filling and no chocolate. Just this flakey golden crust, the delicious cream and then halved strawberries and whipped creme on top

She always paired it with her chocolate/coconut crust pie filled with boston creme and topped with whipped cream and chocolate shavings. So you got both the fruit and the cocoa...yeah....

Your aunt is an awesome cook; no wonder you ended up in the food business! Hope you had a good week and I wish you an even better weekend! :hi:

On edit: I like to play around with the crusts, too. I've made one that is all coconut and I often will pulverize pecans, pistachios, or almonds and substitute them for a portion of the flour. I'm nuts for nuts, and they give a sweet piecrust a really nice crunch. :crazy:

I should work on the pie crust - I've been cheating and buying store ones for some time. I learned to make em when I was a kid, but don't always want to take the time.

8. My sister likes the ready-made ones and uses them all
the time. I have used them, but I'm kind of a maniac about low-tech. I'm sure I wouldn't be if I had to pull on the pantyhose and work from 9-6. I love to make pies. When I was beginning the 9th grade I made a pie for our family every single day to try to please my dad. My mom was in incredibly thrifty housekeeper, though, and I didn't get the chance to work with good ingredients. We finally called an end to a pie every day when we got down to the raisin pie, the only ingredient I had to make a filling. It turned out okay--but it was raisin and dad told me I had gone too far! :hi:

9. I like simplicity when it comes to food.
I can go fancy-as-you-please, but easy suits me best. The pie pan in the slideshow is a tart pan with a removable bottom. It has been really handy when I need to take a dessert to a party. I leave the sides on until ready to serve, then just push up from the bottom when it's time for presentation. Thanks for stopping by! I just made two new videos today, one for Posole and the other for the 18-Hour Bread. I am having so much fun learning the programs that have been on my computer since day one but I didn't get around to cracking them until my husband gave me this blog. Thanks for dropping by! :hi:
