I learned a new kitchen/food word today - scoby
SCOBY is an acronym standing for Symbiotic Colony of Bacteria and Yeast. Examples include:

Ginger beer plant
Kefir
Kombucha
Mother of vinegar
Tibicos (also known as tibi, water kefir grains, sugar kefir grains)
Sourdough


Just thought I'd share....

Did you know you could make kefir from water??? Neither did I until recently.

2. Well, there has to be something in the water for the bacteria to eat
but sugar would probably do it.

The result would be a lot like switchel, I'd think.
