Anyone ever baked in the small 3X5 ceramic loaf pans?
I usually make about 6 full size loaf pans of date nut bread for Christmas gifts for friends but this year I find my situation different. I cannot justify buying all the ingredients for 6 or 8 big loaves.

I feel like a Scrooge but when it will cost me a fortune just to heat this house this winter, some things just have to change.

I bought 4 of the small ironstone(?) baking pans and want to make the date/nut bread in them. Since my big loaves take about an hour+, what should these little ceramic pans take for baking time?

The recipe is great and makes a great loaf but I am afraid I will burn them. Any ideas would be a great help.
Thanks,
PR

1. I don't know about the baking time, but
my baking improved quite a bit once I started using a probe thermometer. If you can find what temp to cook them to, just set the alarm to go off when they're done. No guessing.

2. toothpicks
Does testing with a toothpick work with date/nut bread like it does with cakes?

I wouldn't worry about feeling like Scrooge, everyone I know is being frugal nowadays. I'm glad I remember how my Grandmom and Mom used to pinch pennies. They both lived through the 1920s-1930s Depression.

3. I think the rule of thumb is...
1/4 less the time of a big loaf. So, around 45 mins., although you'll want to check 10 minutes before they are supposed to be done.

I have only made salmon loaf with mine. They are perfect for that. It fits one big can. I love it! A nice thing for us single folk to have.
