can I freeze an UNBAKED pecan pie?
and how much longer should it bake frozen as opposed to fresh? thanks!

1. I would at least partially bake it, I think.
When you want to bake it, just pop it in the oven and keep a good eye on it.

What says everyone else?

I would thaw and bring to room temperature. I don't know what freezing would do to the uncooked filling with all that raw egg in it.

I was trying to think how to do pies for "pick-up and delivery" today that would still be good on Saturday. Pecan will actually last a long time anyway and I didn't get them done until this morning either! So the recipients can just do whatever they want - eat now, freeze, or whatever.

4. I'm thinking the custard would probably separate
if frozen uncooked. I might premake all the ingredients and hold them in the fridge, assemble the pie just before the roast beast comes out of the oven, and bake it while people are eating. But that's just me and I like my pecan pies hot. With ice cream or frozen yogurt.
