Every once in a while I get a bug to make my own mayonnaise--
The best recipe I have ever found is in the Better Homes and Gardens
Cook Book. I dont do it too often, as I usually put at least 5 pounds on in the following weeks.
Sometimes I use olive oil instead of regular vegetable oil. If anyone is making their own, I have found that a few pinches of Paprika as a last addition makes it delicious. As anyone can tell, I am in the middle of a diet binge and thinking of great foods that I wont eat.

2. I only eat homemade
To make 1 cup of mayonnaise.

1 cup of light olive oil
1 egg yolk
1 tbs. lemon juice or vinegar (or combo)
1/4 tsp salt
1/4 tsp white pepper

Combine salt and pepper, lemon juice, and egg yolk in a mixing bowl. Whisk until a light yellow color is achieved. SLOWLY, pour the oil into the bowl while whisking vigorously, (literally) one drop of oil at a time.

As more oil is introduced, the emulsion will become stronger, allowing you to add oil more rapidly. However, you never want more then a thin stream of oil entering the bowl at a time..

Somtimes I experiment with it.

to Hellmans/Best Foods.

And she throws a lot away when it doesn't jell right from over mixing.

It seems like such a waste of time for too little reward.

Now, homemade pie crust and pies - that's another thing!

And my sister is a GREAT cook! She used to make all her own baby food - which I loved when it was my turn to feed the kiddies! She turned me onto sauted carrots in butter - ummmmmm!
