I love Butter Beans

I love Butter Beans
I usually just cook them on medium for about 5 to 10 minutes (canned) and then add salt, pepper, and garlic powder. I found a few recipes by googling for BB caseroles using smoked sausage, so I'm gonna experiment. I also thing I'll try making succotash with BB. I don't really like the green limas.

Any other recipes for butter beans?

I am gonna buy some dried BBs and see how they turn out too.

1. Butter Baked Beans
2c. dried large limas
8 c. water
1 T. vegetable oil
2 t. salt
1/2 c. honey
1/4 c. butter
1/2 c. water
1 c. frozen whole pearl onions

Rinse the beans. Combine beans, water, oil and salt. Bring to a boil, reduce the heat. Cover and simmer until almost tender for 1-1 1/2 hours.

Drain and reserve 1 c. of liquid. Put beans into a 2 quart casserole. Combine all ingredients but the 1/2 c. water and pearl onions. Pour this mixture over the beans and stir. Cover and bake for 1 hour at 300 degrees.

Bring 1/2 c. water to a boil. Add the frozen onions and bring to a boil again, reduce heat. Cover and simmer for 5 minutes and drain. Mix the cooked onions into the beans and cover and bake for 1 more hour.

Takes a while, but the end result is really delicious!

2. Dried Beans with Garlic Sauce
1 lb. dried butter beans, soaked overnight
1 head garlic, whole
8 garlic cloves, minced
1/2 c. olive oil
1 t. cumin
1 T. salt

Peel the outer cover of the whole garlic head, but leave the cluster of cloves whole. Cover beans and garlic with water and cook uncovered until the beans are almost tender. Drain and remove the garlic head.
Place beans into a large frying pan.

Saute the eight minced garlic cloves in oil. Strain. Combine oil with cumin and salt. Pour the mixture over the beans and cook on low uncovered for 25 minutes. Serve hot.

3. I make soup with them
I use a fresh pork bone or maybe a few ribs. Skim the pot after they cook to soft, falling off the bone stage. I cook the pork with bay leaf, onion, bit of garlic, salt and peppercorns to taste.

When the meat is done, I add the butter beans, some canned carrots and also a can of condensed tomato soup. Add the meat back in, in small pieces, if desired.

Looking back at this recipe, it looks a little weird. But it tastes great. I love b/beans, too!

4. Mine is just as wierd
I cook the beans with bacon grease and onions until soft. I then serve in soup form with fresh chopped onions and catsup. I love buttered sandwich bread with this. My husband pours evaporated milk in his almost beanless soup; and likes cornbread with his. Our children with one exception all hate them. Viva la butterbean.
